The flavors in their dishes are derived from ingredients that are unique and local to the region. Panchforan (a mix of -fennel seeds, fenugreek seeds, mustard seeds, nigella seeds, cumin seeds) and whole spices give the food depth and complexity like none other. While cold-pressed mustard oil adds zest and freshness to the dishes. Roasted gram flour (popularly known as “sattu”) is another predominant ingredient from the region and is used to make their trademark dish “Litti”.
